Sweet (!) and savoury garlic recipes inspired by Langley's Purity Farms.
For our September 2017 issue, we visited the home of interior designer Sydney Carlaw; she and her IT executive husband transformed a forgotten Langley property into an idyllic, rustic-chic home—and a thriving garlic farm. So, naturally, we asked resident food guru Julie Van Rosendaal to take inspiration from Purity Farms to create four incredible garlic recipes that you’ll want to eat all day, every day.
Garlicky fries are tossed with garlicky oil later on in the baking process so that it doesn’t burn and turn bitter in the oven as the fries brown.
Lamb and garlic get along so well together; slow roasted, a leg of lamb can be pulled apart to serve wrapped in soft pita—and topped with a garlicky yogurt sauce. If you think of it, stir together the sauce a day or two before you plan to use it—the flavours will improve with some time in the fridge.
This is an old-school recipe that originated in the early nineties, but there are few tastier dishes for garlic lovers. Some versions are made with chicken pieces or whole birds, but thighs are inexpensive, flavourful and cook evenly. Be sure to have some crusty bread on hand to mop up the sauce and spread the soft garlic cloves onto.
Yes, garlic ice cream is a thing—roasting caramelizes the natural sugars in a head of garlic, mellowing it out and enhancing its natural sweetness. It’s a surprising combo, but pairs well with the sweetness of honey and slight twang of sour cream.
