The Deighton Cup – that oh-so-Instagrammable event of the fascinators, cigars, oysters, cocktails and horse races – returns to Hastings Racecourse on Saturday, July 20 for its 11th Year. As always, there’s a signature cocktail for the event—this year designed by Nightingale’s Tim Lambden, and simple enough for the at-home bartender to bring the tracks home with them. (The recipe won top prize at the2019 Deighton Cup Cocktail Jockey competition at Reflections at the Hotel Georgia on May 4.
Suit up, pin on your best fascinator and grab your prettiest bar wear—this gin-based cocktail was made for summer barbecues (and horse races, too).

2 oz Botanist Gin 1 oz Fresh lemon juice1/2 oz Yellow Chartreuse Sugar syrupSplash of elderflower syrup Drop of lemon balmSoda water Elderflower sprigs
Add ice along with the first five ingredients to a cocktailshaker, shake and strain into a Collins glass topped with ice.
Finish with soda water and garnish with elderflower sprigs.
