This is a simple dressing with enough acidity to cut through the richness of the mushroom and onion sauce. Toss it with tender lettuces like baby gem, butter or red leaf lettuce.
¼ cup chives, finely chopped
Zest of one lime
¼ cup lime juice
cup olive oil
Salt and freshly cracked black pepper, to taste
Combine all ingredients except the olive oil. Slowly drizzle in the oil while whisking and season with salt and pepper. Serves 4.
