We’ve been fans of Blue Heron for a while now—the plant-based cheese company flew onto our radar last summer, when we named co-founder and cheesemaker Karen McAthy one of our Foodies of the Year.So when we found out she and business partner Colin Medhurst had opened up a cozy brick-and-mortar “cheese” shop on Main Street this spring, we were keen to get inside and get our hands on some of her delicious cultured experiments. Their wares may sell out every Saturday, but we were lucky enough to get a taste of the magic first-hand.
